Jam sandwich biscuits

1. Whip the butter and agave together until combined and creamy
2. Add the eggs to the mixture one by one and make sure to mix in between each addition
3. Sieve the flour, baking powder and salt in a separate bowl and then mix the dry ingredients with the wet ingredients until they are all combined
4. Place the dough in the fridge for 30 minutes to set

5. Pre-heat your oven to 180c
6. Lightly flour the surface you are working on and roll out your dough
7. Using a round cookie cutter, cut out as many circles as you can
8. Then cut out little heart shapes out of each centre of half the number of round cookies
9. Place them all on a lined baking tray (including the cut out stars and hearts) and bake for 8-10 minutes

10. While your cookies are in the oven, heat the jam in a saucepan over medium heat
until it reduces and becomes thick (about 7 minutes) and allow it to cool off
11. When the cookies are done and golden brown, take them out of the oven and allow them to cool
12. Assemble them by putting a dollop of jam on the whole rounds and then place the heart cut out rounds on top

13. Leave for a while for the jam to set before eating and enjoy!



For the dough:
125g Butter
50ml Agave Nectar Syrup
(add to taste)
2 Eggs
625ml Flour
12.5ml Baking Powder
1ml Salt

For the filling:
125ml Meridian Strawberry Fruit Spread (sugar free jam)

Round cookie cutter
Mini heart & star shape cookie cutters
