DSC_0095  Pancakes and a fruit compote are fairly easy for little ones to help make and delicious for a breakfast treat.
For the pancakes: Preheat the oven to 200 degrees. Whisk together the flour, wheat germ, sugar, baking powder, baking soda, and salt in a bowl. Then add buttermilk, oil, eggs and whisk together. Let stand for 10 minutes. Then coat a non-stick skillet with cooking spray and heat over medium heat. Spoon in 4 tablespoons of batter for each pancake. Cook until bubbles appear. Flip, and cook until golden brown, for about 2 minutes. Keep warm in the oven while cooking the remaining batter.

For the fruit compote: choose a selection of fruit, (I used a handful of strawberries, blackberries and blueberries) 3 teaspoons of brown sugar or agave nectar and juice from one medium sized freshly squeezed orange. Add all ingredients to a pan and simmer until reduced down to thick consistency (about 5-7 mins). Serve in a little bowl to accompany the pancakes.

WHAT YOU NEED

For the Pancake:
1 1/4 cups whole-wheat flour
1/4 cup wheat germ
2 tablespoons brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon coarse salt
1 1/2 cups low-fat buttermilk
1/4 cup vegetable oil
2 large eggs, lightly beaten

For the Compote:
Hand full of blueberries
Hand full of blackberries
Hand full of strawberries
3 teaspoons of brown sugar
Juice from a freshly squeezed orange
