Matcha Smoothie Bowl

Smoothie-bowl2 St Patrick’s Day is nearly here so I will be celebrating with this beautiful Green Matcha Smoothie. I am loving smoothie bowls right now, the key is to make it as bright and beautiful as you can and with a generous sprinkle of (healthy) contrasting toppings. For this, I opted for toasted organic coconut flakes, sunflower seeds and strawberries, but use whatever you have available.

Matcha is one of my favourite superfoods, I always have a small pot in my pantry. It has 137 times more antioxidants than regularly brewed green tea so it’s incredibly nutritious. It also calms the mind and relaxes the body…perfect in a smoothie or sprinkled on your morning cereal to set you up for a busy day.

Serves: 1

A handful of baby kale or spinach
1/2 frozen banana
1/2 cup unsweetened almond milk
1 tsp nut butter (I used almond butter)
2-3 medjool dates, pits removed
1 tsp matcha powder 1/2 tsp maca powder
1/2 tsp ground flax and chia seeds

Topping suggestions
Fresh strawberries
Flaked coconut, toasted
Sunflower seeds
Nuts (pecans, walnuts, or almonds)

♣ Pulse all the ingredients in a blender, stirring often until the greens are all blended and the smoothie has a wonderful green colour.
♣ Serve in a bowl garnished with your favourite toppings.
